And what made me decide to share a recipe with you is when a former colleague sent me a text to ask for the recipe.
That is because it is so good and easy to make.
You can combine all the ingredients the night before and bake it in the morning before going to work or any other event.
It reheats well and freezes well.
This dish works with breakfast, brunch or dinner.
When I worked full time, I would bring it in to work when we did a breakfast eat in.
I always serve it when I have baked ham. It is good to serve as a side dish with pork or chicken.
Now I gave you the exact recipe but I am going to tell you what I did differently. Sometimes I use cream of celery soup, or another condensed soup. Whatever soup you use, it is the best potato casserole in the world.
Another thing I like doing is adding more than the 1 cup of crushed potato chips. I just crush and put on top and if it isn’t enough I add more.

This is a recipe I have made for years. It was given to me a long time ago because it was my stepchildren’s favorite dish. And it is one of those recipes that has stood the test of time. Make a scrumptious chicken broccoli casserole for dinner. The family will love it.
Now the kids are adults but I happen to like casseroles so I make it quite frequently. You really don’t need anything else to go with it. Although I always make a side dish of rice, which is a nice compliment.
Go the easy route and use one of the side dishes of prepackaged rice mixtures. You can get a chicken broccoli flavor or cheddar broccoli flavor and it is perfect with the casserole. It does make a scrumptious dinner with hardly any fuss.
And can you believe it? I stick to the recipe, pretty much. The only thing I do differently is to buy broccoli cuts instead of using broccoli spears and make half a recipe. Ok, and add a lot of cheese on top.
If there are any leftovers, the recipe freezes well. And as with any dish like this, it is always better the next day.
