When a group of blogger friends started talking about favorite chili recipes I knew I had to share my favorite one. So with the cooler weather coming in most parts of the country it is time for another family favorite recipe great chili.
I always have the ingredients on hand and even make it during the summer. Yes even during our brutally hot Florida summers. That is because I donate blood and it is a great recipe to make sure my iron levels are high enough to donate. Now I know that is not a usual reason to make chili but that is mine and I’m sticking to it. 🙂
You know my recipes aren’t complete without tweaking them. I like to add some minced garlic to the mixture. I add enough to my liking. You can certainly leave it out if you aren’t a garlic lover like I am.
I use my food processor to chop the onion. It is much easier than the old fashioned way don’t you think? Brown the onion with ground meat. Once browned, use a slotted spoon to remove meat-onion mixture a plate to drain off oil. Then use a slotted spoon to put it back in the pan.
The recipe calls for canned tomatoes and red kidney beans. Nowadays they make spicy red kidney beans so I usually add them. I have also switched to using Rotel Tomatoes. Any version tastes good.
And if you really want to spice it up, get the spicy chili powder. I let it simmer all day and of course the next day it is even better. Serve with your favorite hot bread or rolls. Ummm good.
