Instructions
  1. Rinse and trim zucchini. If using the medium zucchini, cut in half and then into 1/2″ thick slices.
  2. Heat olive oil in a large nonstick skillet over medium heat. Add zucchini and onion. Cook, stirring occasionally, for 6 to 8 minutes or until the vegetables are tender.
  3. Add walnuts, oregano, salt, and pepper. Cook and stir for 1 more minute.
