I wasn’t going to share a time honored family cookie recipe. I figured it is so well known and everyone makes it. But as I was making this recipe that I know as 7 Layer Cookies I decided I had to share it.
What I love about this recipe is there is no wrong way to prepare it. It is quick to make and it is a hit where ever you share it.
I first had it when my aunt made it years ago. My mother was the gourmet cook in the family and made many different kinds of Christmas cookies, some so time-consuming and elaborate. Aunt Vie who I always thought of as ahead of her time worked in management as we said back then. She didn’t have the time or the inclination to fuss in the kitchen. This was a big deal when Aunt Vie made it. Her fudge was excellent also. I should try to find the recipe and share it some day.
I am constantly doing something different when I prepare this As, usual I will share the original recipe and of course tell you how I change it. This year I stuck pretty much to the way Aunt Vie made it. My change for this year is to do a 1/2 cup of walnuts and 1/2 cup of pecans.
Now last year instead of buying graham cracker crumbs I bought graham cracker crusts because it was on sale and I didn’t want to end up with a box of graham cracker crumbs. It worked so I did the same thing this year. It takes 2 crusts mashed into the melted butter.
Now back in the day when this recipe was created they had cans of coconut and 6 oz package of the baking chips. To tell you the truth I haven’t seen either in years. So I buy the smallest package of coconut I can buy. I sprinkle it on until I am happy with the coverage.
Then I measure 6 ounces of the chocolate and butterscotch chips in the measuring cup and sprinkle it on top of the coconut. Sometimes I use peanut butter chips or white chocolate chips in place of the butterscotch chips. It all tastes good.
And as I mentioned this year I used a combination of nuts. If I use the white chocolate chips I use macadamia nuts. So this time honored family cookie recipe has changed with the times but it is always so delicious.
