Have you ever noticed when the cooler weather hits we start thinking about comfort food? Even though it is still hot in Florida I decided to make a spicy meatloaf for dinner tonight.
Now if my mother were still alive she would be so surprised that I like meatloaf. When I was a kid I would always turn my nose up when we were having meatloaf.
But when I discovered this recipe using Ro-Tel tomatoes I was a convert. Through the years I have made changes to the original recipe. Which I will share with you.
I like the spicy flavor the Ro-Tel tomatoes give to the recipe. If you aren’t one for spicy food then this may not be the recipe for you.
My favorite way to serve this delicious meal is with a baked potato smothered with butter and a veggie. Perhaps not the healthiest way to serve it but like I said for me it is a comfort food. And that is how I ate the meal as a child.

- 1 1/2 Pounds Ground Beef
- 1 Cup Panko Bread Crumbs
- 1 Egg
- 1 Can Ro-Tel Diced Tomatoes and Green Chilies
- 1 Small Onion Chopped
- 2 Tablespoons Hot Mexican Style Chili Powder
- 1/3 Cup Chucky Salsa Or to taste
Preheat oven to 375 degrees.
Combine first six ingredients to a bowl, mix well.
Spread in 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan.
Bake for 1 hour or until done.
Add salsa to the top before serving.
