The 2nd day of Christmas brings us to a favorite Christmas movie and a recipe or a craft. I have many favorite Christmas movies among them “National Lampoon’s Christmas Vacation”. Do you remember Aunt Bethany? I will have jello with that Christmas Vacation. How about you?

Now I could have chosen many recipes most notably eggnog in the Moose Mugs but since I don’t have the Moose Mugs I decided on a recipe that uses jello. Because Aunt Bethany brought her famous jello salad when she and Uncle Lewis came to spend Christmas with Clark and Ellen and the rest of the family.
Aunt Bethany’s jello was lime and one is strawberry but you get the idea. Now you know me, I tweak my recipes and this one is no exception. Sometimes I substitute orange jello for the strawberry flavor and add mandarin oranges in place of the frozen strawberries.
I also cut the recipe in half and it turns out fine. I know the recipe is called Pretzel Salad but I really consider it a dessert.
You know I had to watch the movie as I wrote this. As many times as I have seen it, I still laugh out loud. What is your favorite Christmas movie? And do you have a favorite recipe that goes along with it?

- 1 6 oz package strawberry jello
- 1 can crushed pineapple
- 2 10 oz package frozen strawberries Thawed
- 1 8 oz Package Cream Cheese
- 1 8 oz Cool Whip
- 2 cups pretzel sticks Crushed
- 3/4 cup melted butter
- 1 cup sugar
- 3 Tbsp sugar
Melt butter in 9" x 13" pan. Mix pretzels and 3 Tbsps of sugar together with the melted butter. Chill until set so the Cool Whip mixture spreads easier.
Add 2 cups of hot water to jello. Cool.
Add pineapple and strawberries (juice and all) Chill until partially set.
Use electric mixer and mix cream cheese, 1 cup of sugar and Cool Whip together. Spread over pretzel crust.
Pour jello mixture over Cool Whip and refrigerate until you serve it.
