How to use fresh berries in yummy blackberry crisp is on the agenda for today. Or should I say menu? When shopping for strawberries, I had no intention of buying blackberries. My intent was to buy the strawberries for a strawberry pie.
But there they were, right next to the strawberries, looking so delectable. And on sale. How could I resist? I couldn’t. It reminded me of a blackberry crisp recipe I made so long ago and it was time to give it another try. It did not disappoint.
It is an easy recipe and you should have most of the ingredients on hand, except for the blackberries, right? And make sure you have enough butter, in my opinion, lots of butter. I let myself get distracted on the phone and added the one stick of melted butter meant for the topping into the berry mixture. It did not ruin the recipe at all, it made it even better.
But then I am one of those people who have a little -insert any kind of food with butter. Don’t worry if you don’t have any unsalted butter, I used salted. You really can’t tell the difference, but then I am no gourmet cook. Now you can leave the extra stick of butter out if you want to go strictly by the recipe since it is my own little contribution to this Yummy Blackberry Crisp recipe.
Although the recipe doesn’t call for it, add either whipped cream or vanilla ice cream. Right out of the oven. Oh, it is so good. After all, if you are going to eat your total amount of calories in one sitting for the day, you may as well do it up right. You can exercise more to burn off the calories. It is well worth it.

An easy recipe using fresh or frozen blackberries.

- 1 cup flour
- 1 cup sugar
- 1 tsp baking powder
- 1 egg beaten
- 2 Tsp flour
- 3/4 cup sugar
- 4 - 5 cups fresh or frozen blackberries
- 1 stick unsalted butter melted
Preheat oven to 375 degree oven. In a medium bowl, combine flour, sugar and baking powder.
Make a well in the center of the dry ingredients and blend in egg, mixing until topping is crumbly. Set aside.
To prepare the filling, mix flour and sugar in a small bowl.
Place blackberries in a large bowl and sprinkle with the flour and sugar mixture. Toss gently to evenly coat the blackberries. (this is when I added the butter by mistake)
Transfer berry mixture to well buttered oval pot pie dishes or 9"x9"x2" baking dish, and sprinkle topping over berries.
Drizzle butter evenly over the crumbly topping. Place baking dish on a baking sheet to prevent spillovers into the oven. Bake for 45 minutes at 375 degree oven.
