Marie, a very dear friend made zucchini bread and it was so good. She shared the original recipe with her tweaks. I have never made it the original way. Her recipe is so good why take the chance. The only change I made was to add yellow squash along with the zucchini. I figured it was high time I showed you how to make How To Make Marie’s Delicious Zucchini Bread Recipe.
For this day and age, I used coconut oil instead of Wesson oil. I generally like to make one loaf and muffins. When I do that it makes 12 muffins and one loaf of bread.
Now I don’t have a vegetable garden so I have to buy my zucchini at the grocery store. But for those of you who do this recipe will be one you will make over and over. Which is good since I have heard if you grow zucchini it produces a boatload. Another good zucchini recipe is the one I shared that is a very good side dish.
And if you want the original recipe let me know so I can give it to you. But I bet once you try it this way you won’t want to do that. This is so good with butter or cream cheese. I judge how good something is by if I eat it all up or at least most of it. And I will admit this is one of those recipes. How To Make Marie's Delicious Zucchini Bread Recipe
- 3 eggs
- 2 Cups sugar
- 1 Cup Oil
- 2 1/2 Tbsp vanilla
- 2 Cups grated zucchini Sometimes I do half zucchini and half yellow squash
- 2 Cups flour
- 2 tsp baking soda
- 1/4 tsp baking powder
- 2 1/2 tsp cinnamon
- 1 Cup chopped nuts Marie used 1/2 cup walnuts and 1/2 cup pecans and so do I.
Preheat oven to 350 degrees Measure the dry ingredients together, sift after measuring. Add eggs and oil, mix well. Stir in the grated zucchini. Add the vanilla and stir. Then mix in nuts. Pour in 2 greased loaf pans Bake in a 350-degree oven for 1 hour.
