Today brings us to the 8th day of the 12 Days of Christmas blog hop. And we celebrate it by sharing our favorite cookie recipes. I have many favorite Christmas cookie recipes but decided on a holiday oatmeal cookie you will love.

A very good friend of my ex-husband loved to bake and shared so many of her wonderful recipes with me. This is one of them. Actually it is one of my favorite cookie recipes.
As with so many tried and true recipes that stand the test of time I end up putting my own spin on it. And it made it more festive for the holidays also.
The original recipe calls for coconut, raisins, and nuts. In my version, I kept the coconut and nuts but substituted craisins for the raisins. Then added white chocolate chips.
And it turned out so good. The cookies are so rich and buttery. Each bite is filled with so much goodness. As a matter of fact, I think I am going to go get one to snack on, Maybe two. Make it three. I can’t stop eating them.

A Holiday Oatmeal Cookie You Will Love
- 1 Cup melted butter
- 4 Cup Oatmeal Old Fashioned Oatmeal
- 1 Cup Light Brown Sugar
- 1 Cup sugar
- 1 1/2 Cup flour
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 2 eggs
- 1 1/2 Cup Coconut
- 1 tsp water
- 1 Cup chopped nuts I used walnuts Optional
- 1 Cup raisins I used Craisins Optional
- 2/3 Cup White chocolate chips Optional
Mix in order, form balls, and flatten. Bake for 8 minutes in a 350-degree oven.
